Berry Crush comes to us from the lush and mountainous region of Sidama, Ethiopia, specifically sourced from the renowned area of Dembi. Sidama is famous for producing exceptional specialty coffees thanks to its rich volcanic soils, abundant rainfall, high altitudes, and ideal microclimates—conditions that perfectly nurture the vibrant Ethiopian heirloom coffee varieties.

Grown at elevations of 1,900–2,200 meters above sea level, this coffee benefits from slower cherry maturation, resulting in a more complex and concentrated flavour profile. Smallholder farmers in Dembi cultivate coffee traditionally, often interplanting coffee trees among other crops, which promotes biodiversity and enhances the coffee’s unique characteristics.

What makes this coffee truly special is the Carbonic Maceration Anaerobic Natural process, a radical approach that highlights the producers’ dedication to innovation. The coffee cherries undergo fermentation in a controlled, oxygen-free environment, allowing unique flavor compounds to develop before natural sun drying. This meticulous process results in a cup that’s nothing short of extraordinary.

COFFEE

At harvest, only perfectly ripe cherries are carefully selected by hand before being delivered to the local washing station. The coffee then undergoes meticulous sorting and is processed using the washed method. During this process, the cherries are pulped to remove their outer skin, fermented for approximately 36–48 hours, thoroughly washed to remove mucilage, and carefully dried on raised beds over a period of 10–12 days. This slow drying preserves the coffee’s delicate aromas, clarity, and lively acidity.
